This was always a crowd pleaser at my catering events. Simple elegance. Great as a side or a main.

Serves 4
- 1 cos lettuce chopped
- 1 punnet heirloom tomatoes. Cut half of them in half.
- 2 celery cut into battons
- 1 Lebanese cucumber sliced into battons
- 1/2 red capsicum sliced into strips.
- 1 onion sliced
- 2tb lite Italian dressing
- Option 1 fennel sliced thinly
Method
- Chop ingredients as listed.
- Use glass serving bowl or clear plastic.
- Place half quantity of each ingredients in bowl . Give a quick toss. Then repeat with remaining half.
- Chill just before serving.
