This became one of my favourite recipes on rotation.

Serves 1
- 150g Chicken thigh
- 1 cup mixed greens
- 1 lemon
Options
- 1/2 cup mash (now I use cauli mash)
- 1/3 cup rice (now I use cauli rice)
Method:
- Cook chicken in skillet until no longer pink on both sides
- Pace greens on serving plate and cook for 3 minutes in microwave
- Cut lemon into wedge to sprinkle over everything.
- Add 1 of the options if using.
