This became one of my favourite recipes on rotation.

Serves 1

  • 150g Chicken thigh
  • 1 cup mixed greens
  • 1 lemon

Options

  • 1/2 cup mash (now I use cauli mash)
  • 1/3 cup rice (now I use cauli rice)

Method:

  • Cook chicken in skillet until no longer pink on both sides
  • Pace greens on serving plate and cook for 3 minutes in microwave
  • Cut lemon into wedge to sprinkle over everything.
  • Add 1 of the options if using.
