Simple quick to do for 17 people

Greek Salad

Serves  17

Souvlaki Skewers (*bought)
  • 32 Greek Souvlaki Skewers (if you don’t want to cook from raw ones buy them already cooked at BBQ Chicken shop. Some places require you to order ahead for this quantity)
  • 2large Takeaway Hot Chips or cook 1kg frozen chips in oven.
  • 2x 4piece pack Pita Bread cut into half
  • 1 x Tzatziki Dip

Greek  Salad: Homemade Recipe here or buy 1 tray Greek Salad from BBQ chicken shop.

  • 1 large Cos Lettuce
  • 2 Red Onion sliced and seperated
  • 4 Tomatoes quartered
  • 2 Lebanese Cucumber sliced
  • 1 jar Pitted Black Olives (*or use sliced black olives x2 jars)
  • 2x Feta Cubes slice into cubes

Dressing:

  • 1/2 cup Extra Virgin Olive Oil
  • 4tb Lemon fresh squeezed
  • 1tb Honey
  • 1tb Seeded Mustard
  • 1tb Dried Oregano
  • 1tb ACV
  • Sea-Salt and Pepper light pinch
  • 1tb Kewpie Mayo

Method

  1. Preheat oven 180*c . Line foil.on wire rack. Spray with cooking spray
  2. Cook skewers on foil. Approx 20minutes. Turn half way for even cooking
  3. Make salad.
  4. Chop ingredients as listed.
  5. Make dressing in jar with lid on and shake well. Place half salad in serving bowl then 1/2 dressing and mix well then repeat with remaining salad and dressing.
  6. Cut pita bread in half to serve with meal.

This ended up being dinner by candlelight as there was a all ou power outage. Gas BBQ finished cooking the skewers
