Serves 20
- Tacos : 3kg mince, 4 packets gluten-free taco seasoning. 2tb EVOO to cook mince.
- Mexican Rice see below
- 2 jars Salsa
- Garden Salad (cos, tomato, cucumber, celery, fat free french dressing)
- 1 tub Sour Cream
- 1 jar Jalapeno
Mexican Rice Recipe
- 1.5kg Basmati Rice
- 3 litres Water
- Mexican Black Beans
- Fresh Coriander
- Fresh Lime juice
Method
- Cook rice in large pot with the water until cooked not mushy. Drain rice under cold water.
- Add all ingredients including the rice to large frypan and stir frequently until all mixed through and beans are warmed through. Turn heat off. Keep warm in frypan or put into foil tray and cover with foil. If you have large thermal casserole container with lid use that.
- Cook mince for tacos with taco seasoning.
