Mexican Rice #2. Dinner for 16. I am on side dishes. Another is doing mains which is tacos.

Serves 16

  • 2 cup basmati rice  raw weight
  • 4 cups water
  • 1 handful fresh coriander
  • 1 fresh lime juiced
  • 400g Mexican black beans drained
  • Serve with Taco/Burritto/Garden Salad / Sour cream/Taco Sauce

Method

  1. Cook rice by absorption method.  Water to just cover rice by thumb nail deep. Cook in microwave dish 10 minutes.  Do not drain. Water is absorbed by rice. Fluff with fork.
  2. Chop coriander.  Mix into rice with other ingredients

Option 2

Cook rice add 400g drained Mexican black beans , 1 yellow  capsicum, 400g tomato tin, 1tsp each garlic powder, coriander seed, cumin, sweet paprika, oregano, s&p. Fresh coriander
