Another catering recipe for 15.

Recipe serves 20

  • 1.5kg Chicken Breast Fillet  cubed
  • 2 x 400g jar Buter Chicken simmer sauce
  • 1tb coconut oil

Serve with

  • 2 cups Basmati Rice cooked in 4 cups water (add 1tb turmeric if you want yellow rice)
  • Pappadums
  • 1 cup Raita
  • 4 piece pack x4 Naan Bread plain or garlic or a mix of both
  • 1 jar Mango Chutney
  • Tomato & Vegetables recipe

Method:

Butter chicken:

  • Cut chicken into cubes.
  • Fry chicken in coconut oil until brown on first side. It should be turning white on sides!
  • Add sauce and turn chicken. 
  • Cook the rice by absorption method in microwave dish for 10 minutes (*don’t rinse at end or it will be cluggy) just fluff with fork. Put in large serving vessel. Put lid on to keep warm. Or cook on stove in large pot keep stirring so it doesn’t stick or use a rice cooker.

Raita Recipe

NAAN
  • Heat naan sprinkle water on each. Preheat oven 180*c on baking tray for 2-3minutes or 30 seconds in microwave on plate.
