This was a recipe I hadn’t made but everyone  loved it and wanted the recipe.

Serves 20

  • 2x packets Pearl cous cous
  • 1 large pumpkin large cubes
  • 1/4 bunch fresh parsley
  • 2 jars semidried tomato
  • 1 fresh lemon juiced
  • 1/4 block goats feta cubed
  • 1 packet baby spinach leaves
  • 1/2 tsp honey
  • 1 lemon thyme bunch
  • 1/4 jar pitted olives
  • 1 red onion
  • 1/4 bunch basil
  • 1/2 bunch mint
  • S&p
  • Serve with pizza and steamed vegetables.

Method. 

  1. Cut ingredients as listed
  2. Put Pearl cous cous in bowl with warm water then drain.
  3. Add everything to baking tray.
  4. Bake until pumpkin is cooked but not mushy. 30min but check on it.
