This was a recipe I hadn’t made but everyone loved it and wanted the recipe.

Serves 20
- 2x packets Pearl cous cous
- 1 large pumpkin large cubes
- 1/4 bunch fresh parsley
- 2 jars semidried tomato
- 1 fresh lemon juiced
- 1/4 block goats feta cubed
- 1 packet baby spinach leaves
- 1/2 tsp honey
- 1 lemon thyme bunch
- 1/4 jar pitted olives
- 1 red onion
- 1/4 bunch basil
- 1/2 bunch mint
- S&p
- Serve with pizza and steamed vegetables.
Method.
- Cut ingredients as listed
- Put Pearl cous cous in bowl with warm water then drain.
- Add everything to baking tray.
- Bake until pumpkin is cooked but not mushy. 30min but check on it.
