My contributions included a Vegetarian Lasagne and Caesar Salad

Eggplant Lasagne
  • 2 heads cos leaves separated
  • 200g parmesan grated
  • 200g diced cooked bacon
  • 6 eggs boiled
  • 1 packet croutons
  • 4tb caesar dressing

Method

  1. Cook bacon and cut into pieces.
  2. Boil eggs for 7-minutes then cool in water. Peel cut in slices.  Arrange each slice on each leaf.
  3. Top with remaining ingredients.
  4. Layer lettuce around platter
  5. Top with remaining ingredients

I also made a plate of assorted Bruschetta
