This was very popular and on demand at several places I did catering for.

Sorry about quality of photo. I lost original photo. Each time I made it, the recipes changed (2nd option in brackets) depending upon availability of ingredients.
Serves 25

- 3packets Tom Yum soup or (1tb tom yum paste)
- 1tb kaffir lime leaf
- 1 tb lemongrass
- 1tb galangal or (ginger)
- 2 chicken stock cubes salt reduced massells
- 1 bunch fresh coriander with stems
- 3/4 bunch fresh mint
- 1tb thai red curry paste velcom
- 1tb red boat fish sauce
- 1 lime juiced
- 1 red shallot diced
- Option add seafood or vegetables of your choice. I used mushroom, carrot, green beans, baby corn, green shallot
Method
- Chop vegetables into bite size pieces.
- Lace all ingredients in slow cooker or soup pot.
- Add 1 cup water at a time probably 2-3 cups. Until it tastes good don’t dilute it too much.
