Indonesian chicken soup wafted through our house growing up to knock out winter colds and flu. One of my favourite recipes.

Serves 2
- 1tsp evoo
- 1/4 onion sliced
- 1/2 tsp garlic
- 1/2tsp turmeric
- 1/2tsp garam masala
- 40g mushroom sliced
- 375ml chicken stock salt reduced powder with water
- 300g chicken
- 1/2 bok choy sliced
- 1/4 lemon juiced
- 1/2 zucchini sliced
- Light Pinch sea-salt
- Pinch white pepper
- Fresh coriander
- Option : add red chili slices. Tip: remove seeds and membrane if you don’t like the heat of the chili.
Method:
- Chop everything into bitesize pieces.
- In pot add oil Chicken and onion and cook for a few minutes.
- Add remaining ingredients except coriander. Cook until chicken is no longer pink.
- Add coriander and chili if using.
