Inspired by the fast 800 program recipe tomato and herb stuffed chicken. I loved this recipe but adapted it for what I needed. Similar ingredients just my version.

Serves 1
- 150g Chicken Thigh cooked
- 10g Sliced Black Olives
- 1tb Semidried Tomato
- 5g Capers
- 1/2tsp Minced Garlic
- Sprinkle Oregano
- 15g Organic Butter
- 50g spinach
Method:
- I had precooked the chicken yesterday in evoo in preheated 180*c oven for 30 minutes.
- In skillet melt the butter. Add chicken and rest of the ingredients.
- I removed spinach before it had totally shrunk.
- Saute until chicken is warm. Remove and plate up.
- Spinach on bottom. Then chicken and then spoon the rest over the chicken.
- Enjoy!
