Love this recipe. Light meal but so tasty

My version with what I had available.
Serves 1
- 150g BBQ chicken
- 1tsp evoo
- S&P
- 1 Apple sliced
- 1/4 Red onion sliced
- 30g feta crumbled or goat’s cheese
- 3 Cos leaf or mixed leaf
- 1 Tomato cut into wedges
- 1tb pecans can swap for walnuts
Dressing
- 1/2tb evoo
- 1/4tb white balsamic vinegar
- 1/4tb acv
- 1/4tb garlic powder
- 1/4tb onion powder
- 1tsp dijon
- 1tb apple juice
Method
- Cook chicken with evoo in skillet. Shred or cube it.
- Mix everything in a mixing bowl except the dressing.
- Combine dressing pour over salad.
