Love this recipe. Light meal but so tasty 

My version with what I had available.

Serves 1

  • 150g BBQ chicken
  • 1tsp evoo
  • S&P
  • 1 Apple sliced
  • 1/4 Red onion sliced
  • 30g feta crumbled or goat’s cheese
  • 3 Cos leaf or mixed leaf
  • 1 Tomato cut into wedges
  • 1tb pecans can swap for walnuts

Dressing

  • 1/2tb evoo
  • 1/4tb white balsamic vinegar
  • 1/4tb acv
  • 1/4tb garlic powder
  • 1/4tb onion powder
  • 1tsp dijon
  • 1tb apple juice

Method

  1. Cook chicken with evoo in skillet. Shred or cube it.
  2. Mix everything in a mixing bowl except the dressing.
  3. Combine dressing pour over salad.
