Recipe made 12 cups

  • 8 organic eggs but only use 2 at a time. 
  • 1/2 red capsicum diced
  • 4 cherry tomato halved

Method :

  1. Preheat oven 180*c
  2. Place 12 silicon cup liners in muffin tray and spray with cooking spray
  3. Beat 2 eggs in a bowl
  4. Dice capsicum and distribute between each cup
  5. Dice tomato and add to each cup
  6. Fill 3 cups with the beaten eggs.
  7. Repeat eggs x3 times.
  8. Bake for 10-15minutes until egg is set not runny.
  9. Store in tupperware with lid in fridge after cooling.
  10. Can be frozen in ziplock bag without silicone liner.

Can be served on their own or with salad.

Great for grab n go breakfast.
