Recipe made 12 cups
- 8 organic eggs but only use 2 at a time.
- 1/2 red capsicum diced
- 4 cherry tomato halved
Method :
- Preheat oven 180*c
- Place 12 silicon cup liners in muffin tray and spray with cooking spray
- Beat 2 eggs in a bowl
- Dice capsicum and distribute between each cup
- Dice tomato and add to each cup
- Fill 3 cups with the beaten eggs.
- Repeat eggs x3 times.
- Bake for 10-15minutes until egg is set not runny.
- Store in tupperware with lid in fridge after cooling.
- Can be frozen in ziplock bag without silicone liner.
Can be served on their own or with salad.
Great for grab n go breakfast.
