Pumpkin, Zucchini with Parmesan

Serves 1

  • 100g hot salmon fillet
  • 1 cup roast pumpkin pre-cooked
  • 1 small zucchini sliced and pre-baked with parmesan

Method

  1. Cook salmon in 180*c oven on tray for 20minutes.
  2. Mash pumpkin with fork and place into ring mould.
  3. Place zucchini rings around pumpkin. 
  4. Lace Cook salmon on top of pumpkin on a angle.
  5. Enjoy!
