Serves 2

  • 1tb EVOO
  • 1/2 large zucchini sliced
  • 1/4 red capsicum sliced
  • 3 slices red onion separated
  • Sprinkle of each: garlic granules, smoked paprika, dried coriander, cumin, cinnamon
  • 5 gluten free thin sausages

Method

  1. Preheat oven 180*c
  2. Cut vegetables as listed.
  3. Place oil in baking tray.
  4. Place vegetables evenly around the pan
  5. Sprinkle with spices.
  6. Place sausages on top.
  7. Bake until sausages are half cooked then turn after 15 minutes. Total cook is approximately 20 – 30 minutes.
