Mixed Vegetables Medley

This one was inspired by First Place For Health Program.

Serves 1

  • 1 carrot sliced
  • 1/4 onion sliced
  • 3 slices zucchini sliced quartered
  • 3 slices cucumber sliced halved
  • 3 broccoli floret
  • 1 baby green capsicum sliced (*vegepod)
  • 1 red baby capsicum sliced (*vegepod)
  • 1 celery stick sliced
  • 6 tomatoes halved
  • 1 mushroom sliced
  • 1ts garlic minced
  • 1tb Italian dressing (or use evoo with Italian seasoning)
  • Option: pinch seasalt, 1/2 tsp sugar
  • Choose your protein 150g

Method

  1. Cut ingredients as listed
  2. Mix together all ingredients
  3. Serve with Protein.
