Using up ingredients for this one.

Serves 1

  • 1 small handful mixed leaf
  • 5  cooked prawns
  • 1 radish sliced downward from centre.
  • 3 slices cucumber cut in rings then in half
  • 1 mushroom sliced thinly from centre
  • 1tb semidried tomato strips
  • Leftover goat’s cheese cubed
  • Leftover avocado cubes

Method

  1. Place leaf in middle of plate.
  2. Spread avocado bits over lettuce
  3. Spread goats cheese around the plate.
  4. Cut ingredients as listed.
  5. Start with prawns around the middle tails in centre.
  6. Lace semidried tomato between each prawn.
  7. Alternate between each prawn with radish, cucumber, mushroom.
