- 1 organic egg
- 1/2 Avocado
- 5 perino tomatoes
- 3 mushroom
- 1 slice onion
- 2 handful Spinach & Rocket mix
- 1tb parsley
- EVOO cooking spray
Method
- Spraynon stick skillet with cooking spray.
- Place egg in centre of pan.
- Slice mushroom and onion distribute around the egg. Place tomatoes and parsley in gaps.
- Cook egg to your liking.
- Place spinach & rocket on serving plate.
- Place avocado on plate
- Egg in middle and vegetables around the egg and avocado evenly on all sides.
