Serves 1

  • 150g Chicken Thigh Fillet precooked in pressure cooker
  • 1/2 Medium Onion
  • 1/2 Red Capsicum
  • 1/3 Fajita Seasoning Aldi Packet
  • 1tb evoo
  • 1 handful fresh coriander
  • 1/2 lime cut in wedges

Method

  1. I cooked chicken in pressure cooker a few days ago. Cut into strips. Tip: You could use a BBQ chicken or cook the thigh fillet in evoo until no longer pink approx for 15 minutes.
  2. Cut onion and capsicum into strips.
  3. Slice lime.
  4. In skillet add first five ingredients and stirfry until onion and capsicum are cooked.
  5. Place in bowl and garnish with lime and coriander.
