- 150g Chicken Thigh Fillet precooked in pressure cooker
- 1/2 Medium Onion
- 1/2 Red Capsicum
- 1/3 Fajita Seasoning Aldi Packet
- 1tb evoo
- 1 handful fresh coriander
- 1/2 lime cut in wedges
Method
- I cooked chicken in pressure cooker a few days ago. Cut into strips. Tip: You could use a BBQ chicken or cook the thigh fillet in evoo until no longer pink approx for 15 minutes.
- Cut onion and capsicum into strips.
- Slice lime.
- In skillet add first five ingredients and stirfry until onion and capsicum are cooked.
- Place in bowl and garnish with lime and coriander.
