Old favourite recipe of mine. Simple and quick to make. Today’s photo.

Serves 1

  • 100g cooked prawns peeled
  • 1 cup mixed leaf
  • 30g goat’s cheese or feta
  • 1/2 avocado
  • 1/4 lemon wedge juiced

Method

  1. Place lettuce in middle of the plate.
  2. Cut avocado and goats cheese into squares and place 1/2 of the avocado evenly on outer rim. Put remaining avocado in middle of the plate on mixed leaf.
  3. Spread goats cheese between the outer rim of avocado.
  4. Place prawns with tail end in centre all in same direction.
  5. Top with a few more leaves in the middle.
