Old favourite recipe of mine. Simple and quick to make. Today’s photo.

Serves 1
- 100g cooked prawns peeled
- 1 cup mixed leaf
- 30g goat’s cheese or feta
- 1/2 avocado
- 1/4 lemon wedge juiced
Method
- Place lettuce in middle of the plate.
- Cut avocado and goats cheese into squares and place 1/2 of the avocado evenly on outer rim. Put remaining avocado in middle of the plate on mixed leaf.
- Spread goats cheese between the outer rim of avocado.
- Place prawns with tail end in centre all in same direction.
- Top with a few more leaves in the middle.
